<dcterms:abstract xml:lang="en">This doctoral thesis focuses on children's familial food education, in middle- and upper-middle class families. In line with dispositionnalist research on children's familial socialisation, this thesis questions the development of dispositions during childhood, and the mechanisms that contribute everyday to the construction of children's habits, representations and food tastes. This thesis studies norms, resources (material, cultural and symbolic), and constraints leading to families' eating choices, as well as parents' conscious educational strategies to develop dispositions in their children. In a more interactionist perspective, this thesis analyses the construction of the familial food order: a negotiated order between parents, between parents and children, and between children themselves. Finally, this research highlights children's food dispositions and the way in which they are involved in the construction of the familial food order. Through the prism of an everyday topic, the goal is to question the development of dominant food and elementary dispositions. The field survey was carried out through interviews, between 2020 and 2024, with 17 families belonging to urban or peri-urban factions of the intellectual middle- and upper-middle class, with at least one child in primary school (age 6 to 10). Three interviews have been conducted with each family: one with each of the parents (except three with separated parents), and one with all of the children above the age of 4. During this last interview, children drew pictures, wrote a menu, and sorted images of food by season. The children's interviews were also an opportunity to glimpse into their food intake, especially through snacks. The first part of this thesis addresses children's familial food environment, in terms of eating practices and housework organisation. Particular emphasis is given to the parents' relationship to prevailing alimentary norms, specifically ecological and nutritional norms. Research shows that family food is structured by two coexisting food orders: an ordinary order, respectful of the prevailing norms, and a festive order, more distant to these norms. The exceptional dimension of festive food reinforces the normative dimension of the ordinary food order. The second part of this thesis questions parents' educational styles and the way their educational ambitions translate into the supervision of children's eating practices. Research shows that the parents are constantly trying to conciliate three educational expectations: that the children eat well - nutritionally speaking, treating the children as individuals with their own taste and needs, and preparing them for their future by expanding their own gustatory and moral dispositions favourable to the reproduction of the familial eating style. This food education fits into broader educational challenges, and is involved into the development of elementary dispositions transcending food dispositions. The third part of this thesis deals with children's tastes and their place into the everyday diet negotiation process. Children largely embrace parental transmissions, and mobilise those to create normative judgments and stand out. Nonetheless, they occasionally develop strategies to negotiate or bypass the familial eating rules, thus participating to the construction of the familial food order. What is on the line, beyond food in itself, is the development of a dominant habitus, defined by the reappropriation of a distinctive relationship to food, a sens of entitlement to judge and criticise, and an ability to elaborate and impose norms, and to positioned favourably in the framework of symbolic struggles.</dcterms:abstract>
